Friday night date nights at home are our favorite tradition—just the two of us, a great movie, and usually, a pizza. But recently, we decided to skip the delivery and get creative in the kitchen. We started with a low-carb chicken crust to keep things light, but what happened next was pure culinary magic.

While the crust was baking to golden perfection in the oven, I started crisping up some bacon and sautéing fresh spinach. My husband, who was on onion duty, suddenly had a brilliant idea. As he was slowly caramelizing thin slices of onion, he decided to raid the liquor cabinet, throwing in a splash of whiskey and a drizzle of maple syrup along with a pinch of salt.

The aroma that filled our kitchen was unbelievable. When we finally layered those sweet, smoky, jammy onions onto the crust, topped with the savory bacon, earthy spinach, and fresh, melty mozzarella… we knew we had created something special. This isn’t just a pizza; it’s the ultimate date night comfort food.

The Recipe

Pro-Tip: If you prefer a crispier crust, after baking it the first time, flip it over and bake for an additional 3-5 minutes before adding your toppings.

Yields 1 pizza · Prep 20 minutes · Cook 25 minutes

  1. Preheat your oven to 400°F (200°C). In a bowl, mix the ground chicken, parmesan, egg, garlic powder, salt, and pepper until well combined.
  2. Press the chicken mixture into a thin, even circle on a parchment-lined baking sheet. Bake for 15-20 minutes until golden and firm to the touch. Then remove the crust, flip it, and return it to the oven for about 10 more minutes until the surface is almost dry.
  3. While the crust bakes, cook the bacon in a skillet until crispy. Remove, set aside, and crumble. In the same skillet (using a tiny bit of the bacon fat), quickly sauté the spinach until wilted. Set aside.
  4. In another skillet, melt the butter over medium heat. Add the thinly sliced onions and a pinch of salt. Cook slowly until softened and starting to brown (about 10 minutes).
  5. Deglaze the onion pan with the whiskey, then stir in the maple syrup. Cook for another 2-3 minutes until the onions are deeply caramelized, sticky, and jammy.
  6. Remove the chicken crust from the oven. Top evenly with the fresh mozzarella, then the whiskey caramelized onions, sautéed spinach, and crumbled bacon.
  7. Return the pizza to the oven for another 5-10 minutes, or until the mozzarella is beautifully melted and bubbly.
