On those nights I want two things that don’t usually go together: something comforting enough to feel like a hug, and something light enough that I don’t feel weighed down afterward. These burritos are how I get both, and they’re on the table in about 30 minutes.

A burrito is comfort food by definition: warm, filling, and wrapped up like a little present to yourself. Smoky seasoned chicken and crispy air-fried potatoes make the inside hearty, but instead of burying everything under melted cheese, these get smothered in a creamy green cilantro sauce. It’s cool, bright, a little tangy, with a kick from the pickled jalapeños. It soaks into the golden tortilla just enough to feel indulgent while keeping every bite tasting fresh.

Recipe

  1. Make the green sauce: add the cilantro, mayonnaise, Greek yogurt, pickled jalapeños, garlic, olive oil, lime juice, salt, and pepper to a blender and blend until completely smooth. Taste, adjust the jalapeños and salt to your liking, and set aside.
  2. If making your own taco seasoning, stir together the chili powder, cumin, garlic powder, smoked paprika, onion powder, salt, and pepper in a small bowl. This makes more than you need, so store the extra in an airtight jar for next time.
  3. Add the diced potato to the air fryer and cook until golden and crispy, shaking the basket halfway through. For an even quicker meal, air fry frozen fries instead and chop them into bite-size pieces.
  4. While the potato cooks, cook the chicken breast pieces in a skillet over medium-high heat until browned and cooked through. Sprinkle in the taco seasoning to taste and stir until the chicken is evenly coated.
  5. Lay a tortilla flat and spoon a quarter of the chicken and crispy potatoes down the center. Fold in both ends, then roll it up snugly. Repeat with the remaining tortillas.
  6. Set the burritos seam-side down in a pan over low heat and grill, turning occasionally, until golden brown on all sides.
  7. Plate the burritos, spoon the green sauce generously over the top, and finish with sliced avocado, a sprig of fresh cilantro, and a few dots of taco sauce if you like.

  • • 1 medium Potato, diced, or frozen fries chopped into bite-size pieces
  • • 1 pound Boneless, skinless chicken breast, cut into bite-size pieces
